Pre-heat the oven at 200 degrees. In a bowl, whisk eggs, salt, pepper and milk. Grease a cup cake molder. Add carrot, capsicum and boiled chicken in it. Pour egg mixture. Sprinkle grated cheese on it and bake for 20 minutes or until eggs are cooked.
